Ma & Pa's Jambalaya Recipe


Ingredients:

3/4 stick butter

1/2 Yellow Onion, diced

2 or more cloves Garlic, chopped

1/2 bunch Celery, diced

1 Green Bell Pepper, diced

1 Yellow Bell Pepper, diced

1 tbs Black Pepper

1 tbs Thyme

2 Bay Leaves

1 lb. chicken breast, diced

1 lb. ausage, sliced (Eckrich or andouille)

1/2 bunches Green Onions, chopped

29 oz. Vegetable Broth

1/2 bunch Parsley, chopped

14 oz. diced tomatoes with juice

Tony Chachere's Seasoning to taste

Salt to taste

1 1/4 cups uncooked Rice


Directions:

Sauté yellow onions, garlic, celery, green pepper, yellow pepper, Tony Chachere’s, black pepper, thyme, and bay leaves in butter for 15 minutes. Add chicken, sausage, green onions, and rice and cook for 10 minutes. 

 

Add vegetable broth, parsley, and tomatoes.  Bring to a boil, reduce heat and salt to taste. Allow to simmer for 30 minutes or until rice is done. Add additional water or broth as required. Serves 8 - 10
