3 diced roma tomatoes
7 jalapeno, seeded, stems removed, and minced (NO SEEDS / STEMS)
1/2 finely chopped red onions
2 tbs minced garlic
Juice of four (4) lemons
Juice of four (4) limes
1/2 bunch finely chopped cilantro
1/2 tsp thyme 1 tsp oregano
1/2 tsp onion powder
1/2 tsp red pepper to taste
1 tsp black pepper
10 ripe avocados, peeled, pitted
Salt to taste
Mix all items together except for avocados and salt. Allow to set for 1 hour to overnight. About 1 hour before serving, peel-pit-mash avocados and mix with the previous ingredients. Salt to taste. Cover tightly by layering a sheet of plastic wrap directly on the surface of the guacamole and gently squeezing out any air bubbles.
